The main goal in the elaboration of La Celestina is to maintain the full potential of the wine and to showcase the character of the perfectly mature fruit. To achieve this, the fermentation is done in stainless steel tanks with controlled temperatures between 26 or 28 degrees.
The purpose of the wood in La Celestina is to provide complexity, serenity and balance. It rounds off the harmony of every element that composes it. To achieve this, the wine spends 14 months in french oak barrels, 20% of which are new.
White meats, roast lamb or kid in particular, sweetbreads and mushrooms, rice dishes, particularly those containing meat such as rabbit paella, rice black pudding and any dish seasoned with black truffle.
2019 is the sixth vintage of La Celestina, and maintains the spirit and character of the brand, but being a true reflection of the vintage, somewhat less structured than the previous vintage, but deepening on a more elegant, subtle and fresher wine. The nose is intense and honest: fresh and ripe black fruit, with balsamic notes that transport us to a scrubland with thyme, lavender and rosemary. The aromas of fresh fruit and perfectly integrated oak return in a fluid and clean mouthfeel.
I loved it. Very fruity on the nose. Black fruit on the palate, spicy nuances.
Elegant and complex wine. Great choice to drink along with meat. For tapas or as an appetizer I think it’s perfect.
